Quick Vegetarian meals under $5

Tasty meals that you keep in your everyday pantry.

 

 

A well balanced diet is key to keeping flaw-skin. The healthier your skin is the more flawless your makeup will be. Not only what you put on your skin is apart of your beauty but also what you intake to your body is key aspects of keeping your skin flawless and healthy.

Here is a quick inexpensive vegetarian meal I prepare under $5. Now most of the ingredients are everyday pantry items.

1. Broccoli Rice Casserole

Ingredients

3 fresh broccoli florets

1 cup of rice

1 cream of broccoli

salt

pepper

garlic salt

1 cup sour cream

1/2 cup of half and half, almond milk, or whatever milk is in the refrigerator

1/2 cup bread crumbs

 

First boil 2:1 ratio for rice. Two cups of water to a boil, once the water starts to boil add 1 cup of rice. Cover and boil for 10 minuets. You don't want the rice to cook fully as it will cook more in the oven with the casserole.

Cleanse and chop the broccoli florets. Boil for 5 minuets to semi soften.

In a pot mix cooked rice, broccoli, 1 cup of sour cream, salt, pepper, garlic salt., sour cream, milk.

Preheat oven to 375.

Pour casserole into a baking pan of your choice.

Sprinkle bread crumbs evenly over the top if desired, you may replace with mild cheddar cheese.

Bake for 15 minuets.

Served great with dinner rolls and a side salad.

  

2. Vegetarian Potpie

Ingredients 

1 pack of pie shells

frozen mixed vegetables

1 can of cream of broccoli

salt 

pepper

 Thaw out your pie shells 15 minuets prior to preparing you dish.

Boil your Mix vegetables for 10 minuets. Add desired seasoning to water. Set aside 1 cup of broth from the vegetables and drain the remaining veggies. 

In a pot on low mix cooked vegetables, 1 cup of broth, cream of broccoli, salt and pepper.

Preheat oven to 375.

Bake empty pie shell for 5 minuets.

Remove and pour in mixture. 

Take the second pie shell and prepare dough on top of the filled pie-shell covering and sealing the entire pie.

Take a fork and seal and remove excess dough around the perimeter.

Bake for 15 minuets.

Served great with a side salad and a glass of red wine.

 

3. 3 Bean Chili

1 can of red kidney  beans

1 can of white beans

1 can of black beans

1 can of diced tomatoes

salt

pepper

garlic salt

cayenne pepper

chili powder

 

Open can of diced tomatoes, white, black and red kidney beans.

Bring 2 cups of water to a boil.

Add all can ingredients, salt, pepper, garlic salt, a dash of cayenne pepper, chili powder. Boil for 10 minuets

Boil a 2:1 ratio of rice. So for every two cups of water is one cup of rice. If desired.

Served great over rice and topped with sour cream, jalapenos and mild cheddar cheese.
